Ingredients
  

  • 1 lb ground beef wagyu / 80/20 blend preferred
  • ½ tsp salt
  • ½ tsp pepper
  • 2 pieces burger buns
  • 1 tsp olive oil
  • 2 slices cheese Swiss, American, cheddar, etc.

Instructions
 

  • Start by preparing your burger seasoning. In a large bowl, combine the ground beef with salt and pepper. You can go with option A of mixing the seasonings into the beef or option B of forming the patties first and seasoning later. Either way, the key is to season well for the best flavor.
  • Once seasoned, separate the meat into two equal parts to form two 8-ounce burger patties. Keep them a bit larger than your burger buns as they will shrink while cooking. Use your thumbs to create a slight indentation in the center of each patty to prevent puffing during grilling.
  • Chill the patties in the refrigerator for 15 minutes before grilling. This helps them firm up and makes them easier to handle on the grill.
  • Preheat your grill to high heat, around 500 degrees F. You want a hot grill to achieve that perfect sear on your burgers.
  • While the grill is heating, prepare your burger buns. Brush the insides with olive oil and set aside.
  • When the grill is hot, remove the patties from the fridge and season the outside with additional salt and pepper. Place them on the grill directly over the flame.
  • Close the grill lid and cook the burgers on the first side for about 5 minutes. Resist the urge to flip them too soon; you want a nice crust to form.
  • After 5 minutes, spin the burgers 90 degrees on the grill to get those beautiful grill marks without flipping them. Grill for an additional 2 minutes, keeping the lid closed.
  • Now it’s time to flip the burgers. Carefully turn them over and grill on the second side with the lid closed for about 3 minutes. Aim for an internal temperature of 135 to 140 degrees for medium doneness.
  • If you’d like cheese, move the burgers to indirect heat and place a slice on each patty. This allows the cheese to melt while they finish cooking. It should take about 1 to 2 minutes.
  • Once cooked to your liking, remove the burgers from the grill and let them rest on a cutting board for about 5 to 10 minutes. This allows the juices to redistribute for a more flavorful burger.
  • While the burgers rest, add the buns to the indirect heat of the grill, inside facing down, for about 1 to 3 minutes until lightly toasted.
  • Finally, assemble your burgers with your favorite toppings and enjoy the delicious flavors of your grilled burgers!

Notes

  • Storage: Store any leftover grilled burgers in an airtight container in the fridge for up to 3 days. Reheat on the grill or stovetop to enjoy again.
  • Freezing: Freeze uncooked burger patties between layers of parchment paper for easy grilling later. Just thaw in the fridge overnight before cooking.
