Ingredients
  

  • 1 onion diced
  • 1 yellow pepper diced
  • 1 teaspoon garlic salt
  • ½ teaspoon fresh ground pepper
  • 1 tablespoon oil for sautéing
  • 1 tablespoon butter for sautéing
  • 1 pound ground beef
  • 4 burrito-sized tortillas large
  • 1 cup iceberg lettuce chopped
  • ¼ cup ketchup or barbecue sauce
  • 1 cup Gruyere cheese shredded (or cheddar, or a mixture)

Instructions
 

  • Preheat your griddle to medium or medium-low heat. A consistently heated surface will ensure even cooking, so don’t rush this step.
  • In a section of the hot griddle, add the oil, followed by the diced onion and diced yellow pepper. Sprinkle on the garlic salt and fresh ground pepper. Allow these to cook for about five minutes, stirring occasionally until they begin to soften and the onion turns translucent.
  • After five minutes, add the butter to the mix. This will enhance the flavor and allow the vegetables to caramelize nicely. Continue sautéing for an additional ten to fifteen minutes, flipping regularly until the vegetables are tender and golden brown.
  • While the vegetables are cooking, focus on the ground beef. In another section of the griddle, heat another splash of oil along with the remaining butter. Add the ground beef and break it apart with a spatula. Season with the remaining garlic salt and fresh ground pepper to taste.
  • Cook the beef for about ten minutes, stirring frequently to ensure it’s browned evenly and no pink remains. Once cooked, transfer the beef to a bowl and keep warm. It’s essential that the meat is fully cooked and seasoned perfectly.
  • Next, return to the sautéed vegetables. If the griddle needs it, add a bit more butter to ensure the next step goes smoothly. Increase the heat a little if necessary.
  • Take your large burrito-sized tortillas and lay them out on the griddle. In the center of each tortilla, add a generous portion of the sautéed onions and peppers, followed by a scoop of the browned ground beef. Top with a handful of chopped iceberg lettuce and a sprinkle of Gruyere cheese.
  • Now, fold the sides of the tortillas inwards, creating a wrap. Ensure the filling is snugly held inside. You might want to secure each wrap with a toothpick to keep everything together during the grilling process.
  • Return the griddled wraps to the heat, grilling each side until golden brown and the cheese has melted, approximately three to five minutes per side. Keep a close eye on them to avoid burning.
