Ingredients
  

  • 1/3 cup grated Parmigiano Reggiano
  • 1/4 cup fresh lemon juice
  • 1 small garlic clove
  • 1/2 tbsp Dijon mustard
  • 2 anchovy fillets
  • 1 tbsp extra virgin olive oil
  • 5 tbsp fat free Greek yogurt

Instructions
 

  • In the bowl of a food processor, add the grated Parmigiano Reggiano, fresh lemon juice, garlic clove, Dijon mustard, and anchovy fillets.
  • Turn the machine on and let it run for 15 to 20 seconds.
  • Add the extra virgin olive oil and fat-free Greek yogurt.
  • Let the machine run for another 15 seconds.
  • Taste the dressing to check for seasoning, adjusting as necessary.
  • Transfer the dressing into a sealed container and chill in the fridge for at least 30 minutes.
  • Shake well before serving and enjoy!

Notes

  • Refrigeration: Store in the fridge for up to 4 days.
  • Anchovy Paste: If using anchovy paste, use 1/2 teaspoon per fillet.
  • Customization: Feel free to omit anchovies if desired!
