  • 1. Start by washing the citron thoroughly. Cut it into six wedges lengthwise, and use a spoon to scoop out any pulp. This ensures you get the purest flavor.
  • 2. Place the wedges in a large pot and cover with plenty of water. Add a pinch of salt and bring it to a boil. This initial cooking process helps to soften the citron, making it easier to glaze later.
  • 3. Once boiling, reduce the heat to a simmer and let the citron pieces cook until they are completely translucent, which should take about one hour. You'll notice a delightful aroma filling your kitchen.
  • 4. After the cooking time, carefully drain and rinse the citron slices. This will help remove excess salt and prepare them for the syrup.
  • 5. In the same pot, combine the sugar, water, and corn syrup. Heat over medium until the mixture comes to a boil. This syrup is key to achieving that beautiful glaze.
  • 6. Reduce the heat, then gently add the citron slices into the syrup. Simmer for 20 minutes. Keep an eye on the pot to prevent sticking or burning.
  • 7. Once the time is up, remove from heat and let the citron sit in the syrup overnight at room temperature. This resting period allows the flavors to meld beautifully.
  • 8. The next day, repeat the simmering process. Bring the citron slices and syrup to a low boil and simmer for another 20 minutes. Allow them to rest overnight again.
  • 9. Continue this process for a total of six days, simmering and resting each day. This gradual process infuses the citron with sweetness and creates the perfect glaze.
  • 10. On the final day, bring the syrup back to a simmer, ensuring it reaches a temperature of 235ºF (112ºC). Watch it closely to avoid burning.
