  • Preheat your oven to 350º F (175º C). This is important to ensure that your cookies bake evenly. While the oven is warming up, line a rimmed baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  • In a large mixing bowl, combine peanut butter, brown sugar, baking soda, and sea salt. Use a spatula or wooden spoon to cream them together until the mixture is well-blended and creamy. You want it to look smooth and glossy.
  • Next, crack the egg into the mixture and add the vanilla extract. Stir everything together until fully incorporated. The dough should be thick but pliable; it’s a sign that you’ve mixed it just right.
  • Using a tablespoon, scoop out portions of cookie dough and drop them onto the prepared baking sheets, leaving space between each scoop to allow for spreading during baking.
  • Now, gently press the tops of the cookie dough balls with a fork to create a crisscross pattern. This not only gives them a nice look but also helps them bake evenly.
