Ingredients
  

  • 2 large California Avocados peeled and pits removed
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 1 cup fire roasted corn kernels drained
  • 1/2 cup fire roasted red bell peppers patted dry and diced
  • 1/2 cup black beans rinsed and drained
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • Tortilla scoop chips
  • cilantro Freshly chopped, for garnish

Instructions
 

  • In a medium bowl, combine the California avocados, lime juice, and 1/4 tsp salt. Using a fork, mash the mixture until it’s well combined and creamy. It’s okay if there are still a few chunks; that adds character. Once mixed, set the bowl aside.
  • In another bowl, combine the fire roasted corn, red bell peppers, black beans, cumin, and 1/4 tsp salt. Stir gently to ensure everything is evenly coated and mixed. You want to keep the integrity of the corn and beans, so be careful not to mash them.
  • Now comes the fun part! Grab your tortilla chips. Using a teaspoon, scoop a generous amount of the avocado mixture into each chip. Don’t be afraid to pile it on; you want that creamy goodness to shine.
