Ingredients
  

  • 1 large tortilla
  • 2 tablespoons Vegan Sriracha Mayo
  • 1/2 medium tomato sliced
  • 1/2 medium roasted red bell pepper sliced into thin strips
  • 1/4 medium avocado sliced
  • 1/4 cup shredded carrots
  • 1 cup mixed greens

Instructions
 

  • Start by arranging the tortilla on a flat plate. This will be your base. Take a moment to appreciate its soft texture.
  • Next, spread the Vegan Sriracha Mayo generously over the top. You can choose to spread it across the entire surface or keep it to one side.
  • Now, it’s time to add the sliced tomatoes. Arrange them neatly in a line on the center-left of the tortilla.
  • Add the roasted red bell pepper strips over the tomatoes.
  • Next, layer on the avocado slices. Be gentle to ensure the slices don’t break apart.
  • Sprinkle the shredded carrots on top.
  • Finally, pile on the mixed greens.
  • Grab the left side of the tortilla and fold it over the center, covering all the delicious fillings.
  • Next, fold the top and bottom sides of the tortilla over the fillings.
  • Continue rolling the tortilla from left to right, tucking in any veggies that might start to fall out.
  • Once rolled, use a sharp knife to cut the veggie wrap in half. Serve it immediately!
