Ingredients
  

  • 1 pound anelli (ring) pasta
  • 4 tablespoons unsalted butter (divided)
  • 2 garlic cloves (peeled and grated)
  • 1 yellow onion (peeled and grated)
  • 2 tablespoons tomato paste
  • 28 ounces tomato sauce
  • ½ teaspoon salt

Instructions
 

  • Cook the anelli pasta according to package directions. Make sure to reserve 1 cup of the pasta cooking water for later use. This water is starchy and will help to create a luscious sauce.
  • While the pasta cooks, melt 2 tablespoons of butter in a nonstick skillet over medium heat. The smell of melting butter is always a joy!
  • Once the butter is melted, add the grated onion and garlic. Stir to coat and cook for about 4 minutes until they begin to soften, releasing their aromatic flavors.
  • Add in the tomato paste and stir to combine. Let it cook for 2 minutes, allowing the paste to deepen in color and flavor.
  • Next, pour in the tomato sauce and bring it to a gentle simmer. Turn the heat down low and let it simmer for 10 minutes. You might want to cover it partially if it starts splattering. The smell will be amazing!
  • Once the pasta is cooked, drain it and add it to the sauce. Mix it well to coat the pasta in the rich sauce.
  • Add the remaining butter to the skillet. Stir everything together, adding as much of the reserved pasta cooking water as needed to achieve your desired sauce consistency.
  • Season with salt to taste. Taste is key here; adjust it according to your preference.

Notes
