Preheat your oven to 400 degrees F. Start by preparing your baking sheet. Line it with a silicone baking mat or parchment paper. If you’re using parchment paper, give it a light spray with oil to prevent sticking.
In a medium bowl, combine flour, baking powder, and kosher salt. Whisk them together until well blended, ensuring there are no lumps.
Add the Greek yogurt to the dry ingredients and mix using a fork or spatula. The mixture should start to come together but will look crumbly at this stage.
Lightly dust a clean work surface with flour, then turn out the dough from the bowl. Knead the dough gently for about 15 turns until it becomes smooth and tacky but not sticky. It shouldn’t leave dough on your hands when you pull away.
Divide the dough into 16 equal pieces. This will ensure each bite is perfectly proportioned.
Sprinkle more flour on your work surface and on a rolling pin. Take one piece of dough, pressing it flat with your fingers, then roll it out into a 4 ½-inch oval. You want it to be thin but sturdy enough to hold the hot dog.
Take one of the halved turkey hot dogs and wrap it in the rolled-out dough. Pinch the edges to seal it well, then place it seam-side down on the prepared baking sheet. Repeat this step until all the hot dogs are wrapped.
Once all the hot dogs are wrapped, you can brush each one with the beaten egg white. This acts as an egg wash, giving them a beautiful golden color when baked.
Sprinkle the wrapped hot dogs generously with Everything Bagel seasoning. This step is where the magic happens, so be generous!
Finally, bake in the preheated oven for about 25 minutes. Keep an eye on them; they should be golden brown and fragrant. Once done, allow them to cool for about 10 minutes before serving.
