- 1 tablespoon vegetable oil divided
- 1 small onion thinly sliced
- 1/2 large bell pepper sliced
- 3 cloves garlic minced
- 1 tablespoon light soy sauce
- 1 green onion chopped (plus more for garnish)
Crack eggs into a bowl. Add a pinch of salt and pepper, then beat until combined.
