Ingredients
  

  • 6 cups chicken broth low sodium
  • 1 inch piece ginger sliced thin
  • 1 clove garlic minced
  • 20 mini wontons I love the Chicken Cilantro one’s from Trader Joe’s
  • 1.5 cups shiitake mushrooms sliced
  • 4 baby bok choy halved lengthwise
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • scallions sliced green parts only for garnish

Instructions
 

  • Start by bringing the chicken broth to a boil in a large pot. I recommend using a heavy pot like a Dutch oven for even heating. You’ll know it’s ready when you see gentle bubbles forming.
  • Next, smash the sliced ginger with the side of your knife. This releases its natural oils and flavors, making it more aromatic. Add the smashed ginger along with the minced garlic to the pot. Cover it and let it cook for about 5 minutes. The kitchen will start to smell amazing!
  • Once the garlic and ginger have infused the broth, add the halved bok choy. You want to partially cook it for about 5 minutes until it becomes tender yet still vibrant. This step ensures that the bok choy maintains its color and crunch.
  • Now, it’s time to add the frozen wontons and the sliced shiitake mushrooms. Give everything a gentle stir and let it simmer for 2 to 3 minutes. Keep an eye on the soup; the wontons should be heated through, and the bok choy will wilt perfectly.
  • Finally, stir in the soy sauce and sesame oil. These ingredients will elevate the dish with a savory kick. Taste the broth and adjust if necessary; maybe add a bit more soy sauce for saltiness.
  • Once everything is well combined, it’s time to serve. Divide the soup into four bowls. I love garnishing with fresh scallions to add a pop of color and freshness. Each bowl should look inviting and delicious!
