Ingredients
  

  • 1 cup Cooked Ramen or Rice Noodles
  • 1 cup Chicken Broth
  • 2 tbsp Sesame Oil
  • 1 medium Carrot sliced into ¼ inch coins
  • ½ medium Chicken Breast cut into 1 inch cubes
  • 4 medium Baby Bella Mushrooms sliced thin
  • ½ cup Fresh Spinach Leaves
  • to taste Sesame Seeds for garnish
  • to taste Soy Sauce to taste

Instructions
 

  • Start by boiling a small saucepan of water. Once boiling, add the cooked ramen or rice noodles along with the chicken broth. Allow this mixture to heat over medium heat. You’ll want to stir occasionally to prevent the noodles from sticking together. The goal here is to get the noodles tender and warm, so keep an eye on them.
  • While the broth and noodles are heating, take a frying pan and pour in the sesame oil. Set it to medium heat. As the oil warms, it will start to shimmer and may appear a bit wrinkly on the surface — that’s your cue that it’s ready for the next step.
  • Add the carrot, chicken breast cut into one-inch cubes, and baby bella mushrooms into the frying pan all at once. Stir these ingredients frequently for about three to four minutes. You’re looking for the chicken to become opaque and the vegetables to soften just a bit.
  • Once the chicken is nearly cooked through, toss in the fresh spinach leaves. Stir everything together and watch as the spinach wilts down, adding a lovely green hue to your dish. This step only takes a minute or two, ensuring the spinach retains its nutrients while blending with the other flavors.
  • By the time the spinach is wilted, your broth and noodles should be hot. Carefully add the noodles to a serving bowl. Top this with the stir-fried chicken, mushrooms, carrots, and wilted spinach. Make sure to add broth to your desired amount, creating a lovely, comforting soup.
