- 1 cup Basil Leaves tightly packed
- 3 teaspoons Garlic
- 1/2 cup Pine Nuts
- 1/2 cup Parmesan Cheese grated
- 1/2 cup Vegetable Oil (you can use traditional extra virgin olive oil)
- 1 teaspoon Kosher Salt
Wash your fresh basil leaves under cool water. Pat dry.
In a food processor, add garlic, pine nuts, and kosher salt. Pulse to chop finely.
Add basil leaves to the food processor and pulse until finely combined.
With the processor running, drizzle in your olive oil until well combined.
Finally, add in the grated Parmesan cheese and blend until smooth.
Taste and adjust seasoning if needed. Transfer to a jar and store in the fridge.
- Tip 1: For the brightest green color, blanch basil leaves in boiling water for 5-10 seconds, then immediately plunge into ice water before using.
- Tip 2: If making pesto for guests, I recommend using unblanched leaves for maximum flavor.
