Ingredients
  

  • 1 cup Basil Leaves tightly packed
  • 3 teaspoons Garlic
  • 1/2 cup Pine Nuts
  • 1/2 cup Parmesan Cheese grated
  • 1/2 cup Vegetable Oil (you can use traditional extra virgin olive oil)
  • 1 teaspoon Kosher Salt

Instructions
 

  • Wash your fresh basil leaves under cool water. Pat dry.
  • In a food processor, add garlic, pine nuts, and kosher salt. Pulse to chop finely.
  • Add basil leaves to the food processor and pulse until finely combined.
  • With the processor running, drizzle in your olive oil until well combined.
  • Finally, add in the grated Parmesan cheese and blend until smooth.
  • Taste and adjust seasoning if needed. Transfer to a jar and store in the fridge.

Notes

  • Tip 1: For the brightest green color, blanch basil leaves in boiling water for 5-10 seconds, then immediately plunge into ice water before using.
  • Tip 2: If making pesto for guests, I recommend using unblanched leaves for maximum flavor.
