Easy Grilled Greek Zucchini

Ingredients
  

  • 4 small Zucchini
  • 2 T Olive Oil to brush zucchini
  • 2 T Greek Seasoning to taste
  • 3/4 cup Feta Cheese crumbled

Instructions
 

  • Wash zucchini, trim ends, and cut each small zucchini into four lengthwise pieces and each larger zucchini into six lengthwise pieces.
  • If you have larger zucchinis with quite a few seeds, you can trim those seeds off along the edge.
  • Brush both sides of zucchini with olive oil and sprinkle generously with Greek Seasoning.
  • Preheat the Stovetop Grill Pan over medium high heat so it's hot when you put the zucchini on and you can get nice grill marks.
  • Lay zucchini crosswise to the grill grates with flat side down and cook about 3 minutes. (Lift up the edge to see if you have grill marks.)
  • Turn zucchini so the other flat side is down and cook about 3 minutes more. (Check again for grill marks.)
  • Then turn zucchini so the green skin side is down and cook 3-4 minutes more, or until it's done to the desired tenderness when you pierce it with a fork.
  • Arrange the Greek Zucchini on a serving platter, sprinkle with Feta Cheese, and enjoy!

  • Storage: Store leftover grilled zucchini in an airtight container in the fridge for up to three days.
  • Freezing: You can freeze grilled zucchini, but it might lose some texture. It’s best enjoyed fresh.
