Ingredients
  

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Pinch red pepper flakes
  • 2 large cucumbers
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint

Instructions
 

  • In a large bowl, combine olive oil, lemon juice, dijon mustard, salt, garlic powder, black pepper, and pinch of red pepper flakes and whisk to combine.
  • Add in the sliced cucumbers and fresh herbs and toss to combine.
  • Let sit for about ten minutes, season to taste, and then serve.

Notes

  • Storage: Store any leftover salad in an airtight container in the refrigerator for up to two days. The dressing may make the cucumbers a bit softer, but it will still taste great.
  • Freezing: Unfortunately, this salad doesn’t freeze well due to the texture of the cucumbers. It's best enjoyed fresh.
