Ingredients
  

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons unsalted butter softened
  • ½ cup granulated sugar
  • 2 large eggs room temperature
  • cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • ¾ cup mini semi-sweet chocolate chips plus more for topping if desired
  • 2 tablespoons coarse sugar optional topping

Instructions
 

  • Preheat your oven to 450°F and prepare your muffin pan by lining it with parchment liners or greasing each well with non-stick cooking spray.
  • In a medium mixing bowl, sift together 1½ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of baking powder, and ¼ teaspoon of salt. Set this mixture aside.
  • In a large bowl, cream together 3 tablespoons of unsalted butter and ½ cup of granulated sugar. Use an electric mixer or a whisk to achieve a light and fluffy mixture.
  • Mix in 2 large eggs, ⅔ cup of plain Greek yogurt, and 1 teaspoon of vanilla extract to the creamed butter and sugar. Beat them together until fully incorporated.
  • Gently fold the sifted dry ingredients into the wet mixture using a spatula. Be careful not to overmix; the batter should remain lumpy.
  • Once the dry ingredients are just incorporated, gently fold in ¾ cup of mini semi-sweet chocolate chips.
  • Divide the batter evenly among the muffin liners, filling each about two-thirds full. If desired, sprinkle more chocolate chips and 2 tablespoons of coarse sugar on top.
  • Reduce the oven temperature to 375°F and bake for 12 to 16 minutes, until golden brown and a toothpick inserted comes out clean.
  • Allow muffins to cool in the pan for several minutes before removing. Place them on a wire rack to cool completely.
