Equipment

  • Wooden Spoon
  • Mixing Bowl
  • Slow Cooker

Ingredients

  • 15 ounce Black beans
  • 10 to 12 ounce Frozen corn
  • 1 cup Chunky salsa
  • 6 pieces Chicken thighs
  • 8 ounce Cream cheese
  • for serving Steamed rice
  • as desired Toppings

Instructions

  • In a slow cooker, add black beans, corn, and ½ cup of salsa. Top with the chicken thighs and spoon remaining salsa over the chicken. Cover and cook on HIGH for 3 hours, or until the chicken is tender and cooked throughout.
  • Remove the chicken to a cutting board and cut into bite-sized pieces. Return the chicken to the slow cooker along with the cream cheese. Stir and let cream cheese melt into the mixture to create a creamy sauce.
  • For serving: You can serve the chicken and sauce over rice with a sprinkle of lettuce, tomato, and shredded cheese on top. Or you can serve these as tacos with cheese and a couple of taco fixings such as lettuce and tomato.

Notes

  • Nutritional information: does not include rice or toppings.
  • Chicken choice: For moister and tender results, use chicken thighs rather than breasts.
  • Oven preparation: Alternatively, you can prepare this in the oven at 350 degrees F. for about 70 minutes.
  • Weight considerations: If you’re watching your weight, you can leave out the cream cheese for a lighter version.
  • Gluten-free: Use gluten-free tortillas if preparing this as tacos.
