  • 6 tablespoons Salted Butter
  • 2 tablespoons Granulated Sugar
  • 2 tablespoons Light or Dark Brown Sugar
  • 1 teaspoon Vanilla
  • 1/4-1/2 teaspoon Instant Espresso Powder (optional)
  • 1 large Egg at room temperature
  • 1/3 cup, plus 1 tablespoon All-Purpose Flour
  • 1/4 teaspoon Baking Powder
  • 1/2 cup Dark Chocolate Chunks or Chocolate Chips
  • Flaky Sea Salt (optional)

Instructions
 

  • Preheat your oven to 350° F. This step is crucial as it ensures that the blondies bake evenly, giving you that perfect gooey center.
  • In a small skillet set over medium heat, add butter. Allow it to brown lightly, stirring often to avoid burning. This should take about 2 to 3 minutes. You’re looking for a lovely nutty aroma.
  • Once browned, remove the skillet from heat. Stir in the granulated sugar, brown sugar, vanilla, and if you’re using it, the espresso powder. Let this mixture cool until it’s no longer hot, about 10 minutes.
  • In a mixing bowl, whisk 1 large egg for about 1 minute until it’s bubbly on top. The air you incorporate will help give your blondies a lovely texture.
  • Pour the cooled butter mixture into the egg, stirring gently to combine without deflating the egg too much.
  • Add 1/3 cup of flour and the baking powder to the mixture. Stir until just combined. Don’t overmix; you want to keep some air in there!
  • Sprinkle 1 tablespoon of flour over the dough to help the chocolate chunks adhere better. Then fold in the dark chocolate chunks until evenly distributed.
  • Divide the dough evenly between 2 (8 to 12 ounce) ramekins. Make sure to smooth the tops with a spatula.
  • Bake in the preheated oven for 18 to 22 minutes. You want the edges to be set while the center remains gooey. It’s a delicate balance!
  • Once baked, remove from the oven and sprinkle with flaky sea salt for a beautiful finish. Let them cool slightly before diving in. I recommend serving warm, perhaps with a scoop of ice cream.

Notes
