Ingredients
  

  • 4 pounds sweet potatoes peeled and diced into ½ inch cubes
  • ¾ cup brown sugar packed
  • ¼ cup unsalted butter melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 ½ cups mini marshmallows
  • 1 cup pecans whole

Instructions
 

  • Spray crockpot with cooking spray.
  • Clean and cut sweet potatoes into 1'' pieces. Add the sweet potatoes to the crock pot.
  • In a medium bowl, whisk together brown sugar, butter, spices, salt and vanilla until completely combined.
  • Pour butter mixture over the sweet potatoes and stir to combine.
  • Cover and cook on low for 7-8 hours or on high for 3-4 hours or until sweet potatoes are tender.
  • Remove lid and mash sweet potatoes. Then top with mini marshmallows.
  • Cover with lid and continue cooking for 5-10 minutes until marshmallows are melted.
  • Sprinkle with pecans and serve immediately.

Notes

  • Want browned marshmallows? If your crock pot has an oven-safe insert, you can place it in the oven at 375°F for five to ten minutes or until the marshmallows are toasted on top.
  • Love creamy mashed potatoes? You can use a hand mixer to cream the sweet potatoes right in the crock pot!
