  • 2 lb chicken breast boneless skinless
  • 1 1/2 cup jasmine rice uncooked
  • 8 oz cream cheese softened
  • 1/3 cup pesto prepared
  • 2 cups chicken broth
  • 1 cup mozzarella cheese shredded
  • 1/2 cup grape tomatoes halved
  • Fresh basil chopped

  • Preheat your oven to 375˚F. The right temperature is crucial for achieving that perfect bake.
  • In a large bowl, combine the softened cream cheese, pesto, and chicken broth. Whisk until smooth, ensuring all the ingredients are well incorporated.
  • Stir in the uncooked jasmine rice until every grain is coated with the creamy mixture.
  • Pour the entire mixture into a large casserole dish, spreading it evenly. This will be the base of your casserole.
  • Now, take the chicken and trim any excess fat. Cut it into pieces about 2 inches each for even cooking.
  • Arrange the chicken pieces evenly over the top of the rice mixture, gently pushing them down to ensure they’re just submerged in the liquid.
  • Sprinkle the shredded mozzarella cheese generously over the casserole. This will create a beautiful, gooey top layer.
