Baking Sheet
- 4 oz Cream Cheese softened
- ½ cup Unsalted Butter softened
- 1 cup Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 1 ¼ teaspoon Almond Extract
- 1 ¾ cup All-Purpose Flour
- ½ teaspoon Baking Powder
- ½ teaspoon Salt
In a large mixing bowl, combine ½ cup unsalted butter (softened) and 4 oz cream cheese (softened). Using a hand mixer, beat them together for about 30 seconds until the mixture is smooth and creamy.
Add 1 cup granulated sugar to the mixture and continue mixing for 1 minute. The sugar should fully incorporate into the butter and cream cheese mixture.
Crack in 1 large egg and add 1 teaspoon vanilla extract along with 1 ¼ teaspoon almond extract. Mix everything until it’s well combined.
In a separate bowl, whisk together 1 ¾ cup all-purpose flour, ½ teaspoon baking powder, and ½ teaspoon salt. Properly measuring the flour is crucial; always spoon it into your measuring cup and level it off.
Gradually add the dry ingredients to the cream cheese mixture, mixing at low speed just until combined.
Cover the bowl with plastic wrap or a clean kitchen towel and chill the dough in the refrigerator for about 30 minutes.
While the dough is chilling, preheat your oven to 375°F (190°C). Line baking sheets with a silicone baking mat or parchment paper.
After chilling, scoop about 1 ½ tablespoons of dough and roll them into balls. Place these dough balls onto the prepared baking sheets.
Bake the cookies in the preheated oven for 9 to 11 minutes. They should look lightly golden around the edges but still soft in the center.
Once done, remove the cookies from the oven and let them cool on the pan for about 5 minutes. Then, transfer them onto a cooling rack to cool completely.
- Tip 1: Make sure to soften the butter and cream cheese: Cold ingredients will not whip properly.
- Tip 2: Proper flour measurement is key: Whisk the flour in your container before spooning it into your measuring cup.
- Tip 3: Experiment with mix-ins: Feel free to add chocolate chips, nuts, or dried fruit to customize your cookies.
- Tip 4: Cookie storage: Store leftovers in an airtight container at room temperature for up to a week.
