- 4 pieces potatoes chopped into ½-inch cubes
- 1 piece red bell pepper finely chopped
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- 1 small onion finely chopped
- 1 tablespoon fresh herbs chopped
Preheat your oven to 450ºF (230ºC).
In a large bowl, combine the chopped potatoes and red bell pepper.
Drizzle with olive oil and toss to coat.
Add salt, black pepper, and garlic powder and toss again.
Spread in a single layer on a roasting dish and cook for 15 minutes.
Remove from the oven and sprinkle with onion. Toss everything and return to the oven.
