Ingredients
  

  • 1 cup granulated sweetener of choice (monk fruit sweetener or erythritol)
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1 cup peanut butter * See notes
  • 1 large egg ** See notes

Instructions
 

  • Preheat your oven to 180C/350F. It’s important to get the oven nice and hot so the cookies bake evenly and develop a lovely golden color.
  • Line a large baking tray with parchment paper. This prevents the cookies from sticking and makes cleanup a breeze.
  • In a large mixing bowl, combine your dry ingredients: the granulated sweetener, coconut flour, and baking soda. Mix well to ensure everything is evenly distributed.
  • Add the peanut butter and egg to the dry ingredients. Use a spatula or your hands to mix until everything is well combined. The dough should be thick and slightly sticky.
  • Using your hands, form the dough into 12 balls and place them on the lined baking tray. Space them out to allow for spreading as they bake.
  • Press down gently on each cookie to flatten it. For a decorative touch, use a fork to create a crisscross pattern on top.
  • Bake the cookies in the preheated oven for 10 to 12 minutes. Keep an eye on them; they should just start to turn brown at the edges.
  • Once baked, remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely. This helps them set up properly.
