Baking Sheet
- 2 cups All-purpose flour
- 1 cup Granulated sugar
- 1/4 tsp Salt
- 1/2 cup Mini chocolate chips
- 1/2 cup Unsweetened cocoa powder
- 1 tsp Baking soda
- 1 large Egg
- 1 cup Plain unflavored yogurt
- 3/4 cup Shamrock Farms Milk
- 1 tsp Vanilla extract
- 1/2 cup Vegetable oil
Preheat your oven to 400 degrees F. Line your muffin tins with 16 paper muffin liners.
In a large bowl, whisk together the egg, plain unflavored yogurt, Shamrock Farms Milk, vanilla extract, and vegetable oil until the mixture is smooth.
Add the all-purpose flour, granulated sugar, mini chocolate chips, unsweetened cocoa powder, salt, and baking soda to the wet mixture. Gently fold the dry ingredients into the wet, ensuring not to over-mix.
Scoop the batter into the prepared muffin cups, filling each about 2/3 full.
Place the muffin tin in the preheated oven and bake until a toothpick inserted into the center comes out clean, approximately 15 to 19 minutes.
Once baked, allow the muffins to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Tip 1: Unflavored Greek yogurt is a great choice in this recipe and gives it extra protein.
- Tip 2: While warm, muffins tend to stick to paper liners when the liners are peeled off.
- Tip 3: Allowing muffins to cool helps combat this.
- Tip 4: Muffins can also be made without liners, just make sure to generously grease your muffin pans.
