Ingredients
  

  • 1.5 cups Old-fashioned oats
  • 0.5 cups Sesame seeds
  • 0.5 cups Brown rice crisps cereal
  • 0.25 cups Almond flour
  • 3 tablespoons Ground flax seeds
  • 0.25 teaspoon Baking soda
  • 0.5 cups Honey
  • 2 tablespoons Melted coconut oil
  • 2 teaspoons Vanilla extract
  • 12 ounces Dark chocolate, melted
  • 2 tablespoons Toasted sesame seeds, for topping

Instructions
 

  • First, preheat your oven to 350° F. This step is crucial for ensuring that the bars bake evenly and develop a golden color. While the oven warms up, line an 8×8 inch square pan with parchment paper, making it easy to lift the bars out later.
  • In a large mixing bowl, combine the old-fashioned oats, sesame seeds, brown rice crisps cereal, almond flour, ground flax seed, and baking soda. Stir them together until well blended. The mixture should look hearty and have a nice, nutty aroma.
  • Now, it’s time to warm the honey and coconut oil together. You can do this in the microwave for about 20 to 30 seconds. Once melted, pour the mixture over the dry ingredients and add the vanilla. Stir until everything is nicely combined, and the mixture starts to look like a sticky dough.
  • Press the dough firmly into the lined pan. I usually use the back of a measuring cup to pack it down well. This ensures that the bars hold together once baked. You want it to be dense and evenly spread across the pan.
  • Place the pan in the preheated oven and bake for 20 to 25 minutes. Keep an eye on them; you’re looking for a golden top. The bars will continue to firm up as they cool.
  • After baking, remove the pan from the oven and let the bars cool in the pan for about 10 to 15 minutes. Once cooled slightly, you can cut them into bars. It's easier to cut while warm but wait until they are a bit firmer.
  • Now, allow the bars to cool completely before dipping them. This step is essential as it prevents the chocolate from melting too quickly when you dip.
  • Once cooled, prepare your melted dark chocolate. You can do this in a microwave-safe bowl, melting it in 30-second intervals until smooth. Dip each bar in the melted chocolate, coating them generously.
  • After dipping, sprinkle the tops with toasted sesame seeds for an added crunch and visual interest. Place the bars on a parchment-lined tray.
  • Finally, freeze the dipped bars for about 10 minutes to set the chocolate. Once set, they’re ready to be enjoyed or stored in the fridge for later!

These bars can be stored in an airtight container at room temperature for a few days, or in the fridge for longer freshness.
