Equipment

  • Whisk
  • Blender
  • Oven
  • Wooden Spoon
  • Mixing Bowl
  • Baking Sheet

Ingredients

  • 1 1/4 cups Quaker Old Fashioned Oats divided
  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup unsalted butter at room temperature
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup Quaker 3 Minute Steel Cut Oats
  • 1 cup chocolate chunks

Instructions

  • 1. Preheat your oven to 350°F. Line baking sheets with parchment paper or Silpat baking mats and set aside.
  • 2. In a blender, blend 1 cup of the old fashioned oats until powdery. In a large bowl, whisk together the blended oats, white whole wheat flour, baking powder, baking soda, sea salt, and ground cinnamon. Set aside.
  • 3. In the bowl of a stand mixer fitted with the paddle attachment, beat the unsalted butter and both sugars until fluffy, about 3 minutes. Add the egg and vanilla extract and mix until combined.
  • 4. With the mixer on low, slowly add the flour mixture. Stir in the remaining ¼ cup old fashioned oats, steel cut oats, and chocolate chunks.
  • 5. Drop cookie dough, about 2 tablespoons of dough, 2 inches apart on the prepared baking sheets. Bake for 8 to 10 minutes, or until lightly browned.
  • 6. Remove from the oven and let cool for 2 minutes before carefully transferring the cookies to a wire rack to cool completely.

Notes

  • Tip 1: To store leftover cookies, keep them in an airtight container at room temperature. They’ll stay fresh for a few days, making them perfect for snacking.
  • Tip 2: For longer storage, freeze the baked cookies in a single layer, then transfer them to a zip-top bag. They’ll last up to 1 month.
  • Tip 3: Get creative! Try adding dried fruits like cranberries or nuts such as walnuts for added flavor and crunch.
  • Tip 4: Make sure your butter is at room temperature; this helps create a smooth dough and contributes to a tender cookie.
  • Tip 5: A pinch of nutmeg can be added for a warm, spicy flavor to complement the chocolate.
