  • 2 tablespoons butter unsalted
  • 1 pound large shrimp or jumbo, shelled and deveined
  • 5 cloves garlic minced
  • 2 red chili peppers chopped
  • ¼ cup parsley fresh, chopped
  • ½ teaspoon sea salt or to taste
  • ½ teaspoon pepper or to taste

Instructions
 

  • Add the olive oil and butter to a skillet and heat over high heat. Let the fats melt together until they shimmer in the pan, signaling that they are hot enough for cooking.
  • Add the shrimp to the skillet, arranging them in a single layer. You want them to cook evenly, so give them space. Season the shrimp with salt and pepper generously.
  • Cook the shrimp for 2 to 3 minutes until they turn pink, golden, and crispy on one side. You'll see them get opaque as they cook.
  • Flip the shrimp over gently, searing the other side for about 2 minutes. Again, season this side with salt and pepper. The shrimp should be fully cooked through and have a beautiful golden color.
  • Add the garlic, chili peppers, and parsley to the skillet. Stir everything together, making sure the shrimp are coated in the aromatic mix.
  • Continue to cook for another 30 seconds, just until the garlic becomes aromatic. Be careful not to overcook the garlic, as it can turn bitter.
