Ingredients
  

  • 12 ounces sliced smoked sausage
  • ¾ pound halved baby red potatoes
  • ¾ pound trimmed green beans
  • 2 cups sliced bell peppers about 2 whole peppers
  • 2 cups diced onion 1 medium onion
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley flakes
  • ½ teaspoon garlic powder
  • 1 teaspoon paprika
  • salt to taste
  • ground black pepper to taste
  • 6 tablespoons cubed unsalted butter
  • 2 cups shredded sharp cheddar cheese

Instructions
 

  • Preheat the grill to high heat or the oven to 400 degrees Fahrenheit. Lay out 6 large sheets of aluminum foil and spray them lightly with nonstick cooking spray.
  • In a large bowl, toss 12 ounces sliced smoked sausage, ¾ pound halved baby red potatoes, ¾ pound trimmed green beans, 2 cups sliced bell peppers, and 2 cups diced onion, with 2 teaspoons dried oregano, 2 teaspoons dried parsley flakes, ½ teaspoon garlic powder, and 1 teaspoon paprika. Season with salt, and ground black pepper to taste and toss again until everything is evenly coated.
  • Divide the sausage and vegetable mixture evenly onto the centers of the prepared sheets of foil.
  • Add 1 tablespoon of the 6 tablespoons cubed unsalted butter to the top of the sausage and vegetable mixture on each foil packet.
  • Fold the foil over the top of the sausage and vegetables and completely seal the sides of each packet.
  • Place the foil packets directly on the grill and cook for 25-30 minutes or bake in the oven for 35-40 minutes, until the vegetables are crisp-tender.
  • Remove the packets from the heat and carefully open them. Sprinkle 2 cups shredded sharp cheddar cheese evenly over all of the packets and serve immediately.
