- 4 ounces cream cheese softened
- 1/3 cup Buffalo Wing Sauce
- 2 tablespoons Ranch dressing
- 2 cups shredded cooked chicken
- 1 1/2 cups shredded cheddar cheese or colby jack cheese
- 1/3 cup blue cheese crumbles
- 2 green onions sliced
- black pepper
- 12 small flour or corn tortillas
- Ranch dressing for serving
Preheat oven to 425 degrees and spray a large rimmed baking sheet with cooking spray.
Place cream cheese, wing sauce, and Ranch dressing in a large bowl and use an electric mixer to beat until smooth.
Stir in the chicken, cheese, blue cheese crumbles, and half the green onion. Season to taste with black pepper.
Place the tortillas on a microwave-safe plate. Cover with a damp paper towel and microwave for 40 seconds to make more pliable.
Divide chicken mixture between the tortillas, placing it on the lower third of the tortillas. Roll up tightly and place seam side down on prepared baking sheet.
Spray taquitos with cooking spray and bake for 15 minutes or until golden brown.
Transfer to a serving plate and sprinkle with green onion. Drizzle with Ranch dressing or serve with a bowl of Ranch dressing for dipping.
