Ingredients
  

  • 1 1/2 cups All-Purpose Flour
  • 2/3 cup Yellow Cake Mix
  • 1 tablespoon Sugar
  • 3/4 teaspoon Baking Powder
  • Pinch Salt
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1-2 cups Milk I used vanilla almond milk

Instructions
 

  • In a large mixing bowl, combine all-purpose flour, yellow cake mix, baking powder, sugar, and salt. Whisk them together until well combined. The combination of these dry ingredients will create the backbone of your pancake batter, so make sure they are evenly mixed.
  • Next, add milk, eggs, and vanilla extract to the dry mixture. Stir gently until everything is just combined. You want the batter to have a smooth texture, not too thick or too thin. If the batter seems too thick, gradually add a little more milk until the desired consistency is reached.
  • Once your batter is ready, fold in your desired amount of sprinkles. This is where the fun begins! The colors will swirl throughout the batter, making it look even more exciting. Just be careful not to overmix; we want those sprinkles to stay intact!
  • Preheat your skillet over medium heat. If you have an electric griddle, set it to 250 degrees Fahrenheit. The skillet should be hot enough that a drop of water sizzles when it hits the surface.
  • Using a measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake. Space them out to give them room to spread. As the pancakes cook, keep an eye out for bubbles forming on the surface. This usually takes about 2 to 3 minutes.
  • When you see bubbles forming and the edges look set, it’s time to flip the pancakes! Gently flip each pancake with a spatula and cook for an additional minute. You’re looking for a lovely golden-brown color on both sides.
  • Once cooked, transfer the pancakes to a plate and continue with the remaining batter. You can keep the cooked pancakes warm in a low oven if needed.
  • Now for the glaze! In a separate bowl, mix together powdered sugar, milk, and vanilla extract until you reach a smooth consistency. If necessary, adjust with a little more sugar or milk to get that perfect drizzle.
  • Drizzle the glaze generously over your stack of pancakes and top with more sprinkles for that finishing touch. Now, stand back and admire your beautiful creation before diving in!
