Equipment

  • Food Processor

Ingredients

  • ¾ cup mayonnaise
  • 4 fillets anchovy fillets minced then mashed
  • 2 cloves garlic mashed
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 1 teaspoon dijon mustard
  • ¼ teaspoon ground black pepper
  • ¼ cup parmesan cheese grated

Instructions

  • Start with the base: In a bowl or a food processor, add the ¾ cup mayonnaise. This will create a creamy foundation for your dressing.
  • Next, prepare the anchovies. If you're using anchovy fillets, mince them finely and mash them into a paste. Add the mashed anchovies to the bowl.
  • Now, take your 2 cloves of garlic and mash them until smooth. Add this to the mixture for an aromatic kick.
  • Pour in the 1 tablespoon of lemon juice. This will help brighten the flavors and cut through the creaminess of the mayonnaise.
  • Sprinkle in the ½ teaspoon of salt and 1 teaspoon of dijon mustard. These ingredients will enhance the overall flavor profile of your dressing.
  • Add the ¼ teaspoon of ground black pepper to give it a bit of heat. Adjust according to your taste preference.
  • Finally, grate in the ¼ cup parmesan cheese. This will add a salty, savory note that ties the dressing together.
  • Blend all the ingredients until smooth. If you’re using a food processor, pulse until you achieve a creamy consistency.
  • Once blended, taste your dressing. If you want it more tangy, add a bit more lemon juice, or adjust any other ingredients to your liking.
  • Transfer your Caesar Dressing to a sealed container and refrigerate for at least 30 minutes to allow the flavors to meld.

Notes

  • Storage: Store homemade Caesar Dressing in a sealed container in the refrigerator for up to a week.
  • Freezing: It’s not recommended to freeze this dressing, as the texture may change once thawed.
  • Pairing: This dressing pairs wonderfully with crisp romaine lettuce, grilled chicken, or even as a dip for fresh vegetables.
  • Adjusting Flavor: Feel free to tweak the lemon juice or garlic depending on your taste preferences.
  • Quality Ingredients: Always use high-quality parmesan cheese for the best flavor.
  • Make-Ahead: Making your dressing a day ahead allows the flavors to meld beautifully.
