Preheat your oven to 450 degrees F. This is essential for achieving that crispy crust everyone loves.
In a large skillet with high sides over medium-high heat, add the olive oil. Allow it to heat until shimmering, which will only take a minute or two.
Once the oil is hot, toss in the broccoli rabe. Season it generously with salt and pepper. Sauté for about 3 to 4 minutes until the greens have wilted and become vibrant.
Add the crushed red pepper flakes and minced garlic to the skillet, stirring for another 30 seconds to 1 minute until fragrant. Remove the skillet from the heat.
Now, onto your pizza dough! Lightly flour your counter. Using your hands or a rolling pin, roll out the dough until it forms a flattened disk.
Transfer the pizza dough to a greased baking sheet. You can shape it into one large pizza or two smaller ones; I often opt for two smaller, thin-crust pizzas.
Using a spoon, drizzle some of the oil from the skillet over the pizza dough. This will serve as your pizza’s “sauce”.
Next, layer on the kalamata olives and the sautéed broccoli rabe. Sprinkle half of the fresh basil on top.
Add the majority of the mozzarella cheese and, if using, all of the pepperoni.
Slide the pizza into the oven and bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
Once the pizza is golden and delicious, remove it from the oven. Add the burrata cheese and pop it back in the oven for another 5 to 8 minutes. You want the burrata to be warm and gooey.
Finally, sprinkle the pizza with the remaining fresh basil, additional salt, and pepper to taste. Serve it immediately and enjoy every bite!
