Ingredients
  

  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 3 tablespoons water
  • 1 tablespoon vegetable oil
  • 3 cloves garlic
  • 2 teaspoons ginger
  • 1 pound broccoli
  • 1/2 teaspoon onion powder
  • 1/2 pound white mushrooms
  • 1 teaspoon sesame oil optional

Instructions
 

  • Combine the soy sauce, cornstarch mixture, brown sugar, rice vinegar, and water in a bowl. Mix until everything is well blended. This sauce is the heart of your stir-fry, so make sure to blend it well so all the flavors meld together. Set it aside while you prepare the vegetables.
  • Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, it’s time to add the aromatics. Toss in the minced garlic and ginger. Stir them for about thirty seconds until they’re fragrant and golden. You want to be careful not to burn them, as this will impart a bitter taste.
  • Add the broccoli, onion powder, and sliced mushrooms to the skillet. Stir-fry for approximately five minutes. You'll see the broccoli turning a vibrant green and becoming tender-crisp while the mushrooms begin to release their juices. Stir frequently to prevent sticking and ensure even cooking.
  • Pour in the sauce mixture that you previously set aside. Stir well to coat all the vegetables. As the sauce hits the hot skillet, you’ll hear a delightful sizzle, which means the flavors are starting to combine beautifully.
  • Cook for another two minutes, allowing the sauce to thicken. You should see it bubbling gently, transforming into a glossy finish that clings to the vegetables. This is when you can add the optional sesame oil for that extra depth of flavor.
  • Once done, remove from heat and serve immediately. You can enjoy this dish over rice or noodles, or on its own as a light meal. It's a fantastic way to get your veggies in while savoring all the delicious flavors!

Notes

After cooking, allow the stir-fry to cool to room temperature before storing it in an airtight container. It can last up to three days in the refrigerator. If you want to freeze the stir-fry, let it cool completely and then place it in a freezer-safe container. It will keep for up to three months. Thaw in the refrigerator before reheating.
