- 1.5 cups Pancake Mix I used Krusteaz Blueberry Pancake Mix
- 1 cup Water
- 2 teaspoons Vanilla Extract
- 1 cup Fresh Blueberries Plus more for sprinkling on top
- 1 tablespoon All-Purpose Flour
1. Preheat your oven to 350 degrees Fahrenheit. Line an 8x8-inch pan with foil for easy cleanup and spray with cooking spray.
2. In a large mixing bowl, combine the pancake mix, water, and vanilla extract. Stir until just mixed, but don't overmix.
3. In a separate bowl, toss the blueberries with flour to coat them.
4. Gently fold the blueberries into the batter.
5. Pour the batter into the prepared pan and smooth the top with a spatula.
6. Sprinkle additional blueberries on top.
7. Bake for 20 to 22 minutes, checking for doneness with a toothpick.
