Baking Sheet
- ½ cup Butter cut into pieces
- 4 ounces Unsweetened Chocolate chopped
- 4 Eggs at room temperature
- ⅛ teaspoon Salt
- 2 cups Sugar
- 1 teaspoon Vanilla
- 1 ¼ cups Flour
Preheat your oven to 350ºF (175ºC). Line your mini-muffin tins with paper liners.
Melt the butter and unsweetened chocolate in a microwave-safe bowl, stirring at 30-second increments until smooth.
In another bowl, beat the eggs and salt until foamy, about 2 minutes. Gradually add the sugar while beating until thick and pale, about 3 minutes.
Fold in the melted chocolate and vanilla until just incorporated.
Gently fold in the flour until just combined.
Transfer the brownie batter into a gallon zip-lock bag, remove air, and seal.
Prepare the filling by mixing cream cheese and sugar until smooth. Add the egg yolk and mix in chocolate chips.
Pipe the brownie batter into mini muffin cups, filling them about two-thirds full.
Pipe about 1 teaspoon of filling into the center of each brownie, and sprinkle with mini-chocolate chips if desired.
Bake for about 20 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes before transferring to a cooling rack.
