  • Preheat your oven to 350°F (180°C) and line a large baking sheet with parchment paper. This ensures that your biscotti won’t stick, making for an easier transfer and cleanup.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine granulated sugar, light brown sugar, large eggs, vanilla extract, almond extract, and lemon zest. Beat these ingredients at medium-high speed until the mixture becomes thick and pale, about four to five minutes. The color change indicates that air has been incorporated, making your biscotti light and airy.
  • In a separate medium bowl, whisk together all-purpose flour, baking powder, and kosher salt. This step ensures that the leavening agent is evenly distributed throughout the flour, preventing any clumps.
  • Gradually add the flour mixture to the sugar mixture, beating at low speed until just combined. Make sure to stop and scrape down the sides of the bowl to incorporate everything well.
  • Add in the sliced almonds and rainbow sprinkles; mix just until combined. You want these delightful additions to be evenly distributed throughout the dough.
  • Using wet hands, divide the dough into two equal parts, roughly 283 grams each. On the prepared baking sheet, shape each half into logs that are about eight inches long and 3/4 inch thick. The wet hands will help prevent the dough from sticking to your fingers.
  • Bake the logs in the preheated oven until they feel firm to the touch, about 25 to 30 minutes. You want them to set but not brown at this point.
  • Once baked, allow the logs to cool on the baking sheet on a wire rack until they’re cool enough to handle, about 20 to 30 minutes. This cooling period helps to firm them up further, making slicing easier.
  • Reduce the oven temperature to 300°F (150°C). Gently transfer the cooled logs to a cutting board. With a serrated knife, cut the logs crosswise into 3/4-inch thick slices. This will give you the iconic biscotti shape!
  • Place the slices cut side up on the same baking pan. Bake them again until they are firm to the touch, about 15 to 20 minutes, ensuring that they achieve that delightful crunch we love in biscotti.
  • After baking, remove the biscotti from the pan and let them cool completely on a wire rack. Cooling is crucial as it allows them to harden further.
  • For the finishing touch, dip the ends of your cooled biscotti into melted white chocolate, allowing any excess to drip off. Place them on a piece of parchment paper and sprinkle with additional rainbow sprinkles. Let them stand until the chocolate is set, about 15 to 20 minutes.
