Ingredients
  

  • ½ cup unsalted butter melted
  • 2 large eggs
  • ½ cup milk or cream, regular, soy, almond, cashew, etc.
  • ¼ cup maple syrup lite or sugar-free okay
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar packed
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt or to taste
  • 5 Thomas’ Limited Edition Maple French Toast Bagels (or cinnamon-swirl, cinnamon-raisin, or plain, diced in 1-inch pieces)
  • 1 cup confectioners’ sugar
  • ¼ cup maple syrup lite or sugar-free okay, adding additional as necessary for desired consistency

Instructions
 

  • Preheat your oven to 350°F. Prepare your baking dish by spraying a medium-large oval baker with cooking spray or greasing and flouring it. You want to ensure the dish is adequately prepared to prevent sticking, which is essential for this indulgent treat.
  • Take a large microwave-safe bowl and add the butter. Heat on high power for about a minute or until melted. After removing it from the microwave, give it a moment to cool slightly. This step is crucial to avoid scrambling the eggs in the next step!
  • Once the butter has cooled, add the eggs, milk, maple syrup, granulated sugar, brown sugar, vanilla extract, cinnamon, and salt into the bowl. Whisk everything together until it’s smooth and well combined, creating a rich custard mixture.
  • Next, add the diced bagels into the bowl and toss them gently to coat with the custard. Make sure every piece is well covered, as this will ensure they soak up all that delicious flavor.
  • Allow the mixture to rest for about 5 to 10 minutes. This resting period gives the bagels time to absorb the custard. Stir once or twice during this time to ensure even soaking.
  • Carefully turn the mixture out into the prepared baking dish. Lay it in loosely; you don’t want to pack it too tightly. Drizzle any remaining coating mixture over the top of the bagels; this will create a lovely moisture on top.
  • Bake in the preheated oven for about 35 minutes. Start checking for doneness at around 30 minutes. You’re looking for the center to be set and the top lightly golden. The final texture should be soft but not overly wet.
  • While the Baked Bagel French Toast is baking, it’s time to make the glaze. In a medium bowl, combine confectioners’ sugar and maple syrup. Whisk until smooth, adjusting the consistency to your liking.
  • Once the Baked Bagel French Toast is done baking, remove it from the oven and immediately drizzle with the glaze. Serve warm and enjoy the deliciousness!

Notes

French toast is best fresh. However, leftovers can be kept airtight in the fridge for up to 4 days. Gently reheat in the microwave.
