  • Once grated, place the cucumber in a clean cheesecloth or a few layers of paper towels. Squeeze out as much water as possible. This step is crucial as it prevents the tzatziki from becoming too watery.
  • In a medium-sized bowl, combine the drained cucumber with the plain Greek yogurt. Stir until the two are well incorporated.
  • Add the pressed garlic cloves to the mixture. Adjust the amount based on your preference for garlic; more cloves will give it a stronger flavor.
  • Next, drizzle in the olive oil. This not only enriches the dip but also adds a lovely glossy finish.
  • Season with salt and pepper to taste. Start with a small amount, as you can always add more later!
  • Mix everything until fully combined. The tzatziki should have a creamy, thick consistency.
