Ingredients
  

  • 1 pound Ribeye steak cut into 1-inch bite-size pieces
  • 1 tablespoon Soy sauce (low sodium)
  • 1 tablespoon Hoisin sauce
  • 2 teaspoons Sweet soy sauce
  • ½ teaspoon Black pepper (coarsely ground)
  • 1 teaspoon Cornstarch
  • ½ teaspoon Baking soda
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Soy sauce (low sodium)
  • 1 teaspoon Honey
  • 1 teaspoon Chili garlic sauce (such as sambal oelek)
  • 2 tablespoons Water

Instructions
 

  • Marinate the beef. In a medium-sized bowl, combine the ribeye steak with all the marinade ingredients: soy sauce, hoisin sauce, sweet soy sauce, black pepper, cornstarch, baking soda, honey, and chili garlic sauce. Mix until the steak is well coated. Set aside while preparing the sauce and heating your wok or skillet.
  • Prepare the sauce. In a small bowl, whisk all the sauce ingredients together. This mixture will elevate the flavors of the cooked steak bites, so set it aside until you’re ready to toss it with the beef.
  • Cook the steak bites. Heat a wok or non-stick skillet over high heat until hot. Add a tablespoon of vegetable oil or sesame oil to the pan. This will help achieve that perfect sear. Add the marinated beef to the wok, arranging it in a single layer. Allow it to sear for about a minute without stirring to develop a nice crust.
  • Continue cooking the beef. After the initial sear, toss the beef around the pan to ensure even cooking. Cook for another two minutes, tossing occasionally until the steak bites appear almost charred. This is the perfect time for medium-rare; if you prefer your steak cooked more, add an extra minute or two.
  • Add the sauce. Pour the prepared sauce over the steak bites and stir-fry for an additional minute. This step brings all those amazing flavors together. The sauce should thicken slightly and coat the beef beautifully.
  • Garnish and serve. Remove the wok from heat and serve immediately garnished with sliced green onions and sesame seeds for that extra crunch and flavor.

Notes

  • Tip 1: It’s very important to get your wok or skillet very hot to get a nice crispy outside on the steak bites.
  • Tip 2: Cooking time will vary depending on the size you cut the steak bites and how hot your skillet is which is why I recommend to get your skillet really hot before adding the meat to it.
  • Tip 3: If you’re doubling the recipe, you will have to cook the beef in two batches, otherwise the meat will steam rather than sear.
  • Tip 4: Notice I didn’t add any salt and that is because there is plenty of salt from the soy sauce. However, taste and adjust with salt and pepper as needed.
  • Tip 5: Allow the steak bites to come to room temperature before storing them in an airtight container and refrigerating for up to three days.
