Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 4 cups arugula
  • ½ cup sun-dried tomatoes, drained and roughly chopped
  • ¼ cup Parmesan cheese, broken or cut into chunks
  • ¼ cup pine nuts, toasted

Instructions
 

  • In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper.
  • Add the arugula to the bowl and toss.
  • Top with the chunks of Parmesan, sun-dried tomatoes, and toasted pine nuts.
  • Add more pepper to taste.
