Apple Overnight Oats

Ingredients
  

  • ½ Tbsp butter
  • 2 medium apples I prefer Gala or Fuji
  • 1 tsp cinnamon divided
  • 1 Tbsp maple syrup
  • 1-2 Tbsp water
  • 1 ½ cup rolled oats regular or gluten free
  • 1 ¾ cups unsweetened almond milk or milk of choice
  • tsp cinnamon
  • 1 Tbsp maple syrup more or less as desired
  • 1 tsp vanilla extract
  • 2 Tbsp chopped walnuts or pecans
  • 3 tsp chia seeds optional
  • ¼ tsp Sea salt

Instructions
 

  • Dice apples into bite sized pieces. (I leave the skin on but you can peel if desired.)
  • Melt butter over medium heat in a skillet. Add apples and sauté for about 4-5 minutes to soften.
  • Once apples are softened, add in the cinnamon, maple syrup, and water and stir constantly to allow the apples to become coated and most of the liquid to absorb–I like a little bit of sauce so I don't let it all dissolve. Remove from heat and set aside.
  • In a medium bowl, combine all of the oatmeal ingredients and stir well to combine.
  • Add in about ⅔ of the apples and stir gently to combine.
  • Divide into 3-4 individual bowls/jars or into one large container that can be sealed shut. Spoon remaining apples evenly over the top of the oatmeal jars.
  • Refrigerate overnight or for at least 4 hours.
  • Enjoy warmed up or cold in the morning! You can add an extra splash of milk if desired if too much of the liquid has been absorbed.

Notes

Tip 1: Store these overnight oats in an airtight container in the refrigerator for about 4-5 days. The apples will brown a bit over time, but should be okay.
Tip 2: I do not recommend freezing this recipe.
Tip 3: Add more milk in the morning if these seem dry.
Tip 4: Chia seeds tend to absorb quite a bit of liquid.
