Equipment

  • Frying Pan
  • Oven
  • Chef's Knife
  • Mixing Bowl
  • Baking Sheet

Ingredients

  • 1 cup Butter softened
  • ¾ cup Sugar
  • 1 teaspoon Almond Extract
  • 2 cups All-Purpose Flour
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 cup Powdered Sugar
  • 2-3 teaspoons Water to achieve glaze consistency
  • 1 cup Sliced Almonds toasted

Instructions

  • Preheat oven to 400°F.
  • Using a kitchen aid, or large bowl, cream together 1 cup of butter and ¾ cup of sugar. Once light and fluffy, add 1 teaspoon of almond extract.
  • In a separate bowl, sift together 2 cups of all-purpose flour, ½ teaspoon of baking soda, and ¼ teaspoon of salt. Gradually add it to the butter mixture and mix well.
  • Using a cookie scoop, roll the dough into 1-inch balls. Drop them 2 inches apart on an ungreased cookie sheet. Dip the bottom of a glass cup into a bowl of white sugar and use the cup to lightly flatten the cookies.
  • Bake for 7 to 8 minutes or until cookies are slightly colored. Allow them to cool for 1 minute on the baking pan before placing them on a rack to finish cooling.
  • Add 1 cup of powdered sugar and ½ to 1 teaspoon of almond extract to a small mixing bowl. Gradually mix in 2 to 3 teaspoons of water until you reach a glaze consistency. Add optional green food coloring if you wish.
  • Drizzle the cookies with the glaze and top with sliced almonds.

Notes

  • Storage: Store your cookies in an airtight container at room temperature. They will stay fresh for up to a week.
  • Freezing: You can freeze the cookie dough for up to 3 months! Shape into balls and place them in a freezer bag. Bake from frozen, adding a couple of minutes to the bake time.
  • Pairing: These cookies pair wonderfully with a cup of tea or coffee. The nutty flavor complements warm beverages perfectly.
  • Variations: Consider adding chocolate chips or different nut toppings for a twist on this classic recipe.
  • Glazing Tips: If you want a thicker glaze, add less water initially. Adjust until you reach your desired consistency.
  • Serving Suggestions: These cookies are perfect for gifting or serving at family gatherings. They also make a sweet addition to a dessert table.
