  • 1/2 cup sliced raw almonds
  • 1 1/4 cups all-purpose flour
  • 3/4 cup almond flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups low-fat buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon almond extract

Instructions
 

  • Start by preheating your oven to 325 degrees Fahrenheit. Spread the sliced almonds on a cookie sheet in a single layer and toast them for about 5 minutes. Remember to stir them once to avoid burning. They should begin turning golden and fragrant. Once done, remove them from the oven and set them aside to cool.
  • In a large mixing bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt. Make sure everything is combined well to ensure even distribution of ingredients.
  • In another medium bowl, whisk together the buttermilk, eggs, melted butter, and almond extract. The mixture should be smooth and creamy. Don’t worry if it looks slightly curdled; that’s just the buttermilk doing its thing!
  • Now, pour the wet ingredients into the dry ingredients. Using a whisk, mix everything until just combined. Be careful not to overmix; it’s okay if a few lumps remain. You want that fluffy texture!
  • Next, heat your waffle iron according to the manufacturer’s instructions. Once ready, brush it lightly with vegetable oil to prevent sticking.
