Baking Sheet
- 1 jar almond butter I used raw, no-salt added
- ¾ cup brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- ¾ teaspoon salt or to taste
- ½ teaspoon baking soda
- ½ cup mini semi-sweet chocolate chips plus about 2 tablespoons for sprinkling
Preheat your oven to 350°F. Line an 8-by-8-inch baking pan with aluminum foil and spray it with cooking spray; set aside.
In a large bowl, whisk together the almond butter and brown sugar until smooth and combined.
Add the egg, vanilla, salt, and baking soda into the mixture and stir until combined. The dough will be thick and slightly granular.
Fold in the mini chocolate chips until evenly distributed throughout the dough.
Transfer the batter to the prepared pan, packing it with a spatula to form an even, smooth layer.
Sprinkle the remaining chocolate chips on top of the batter.
Bake for about 13 to 14 minutes, or until the center is set and done. Be careful not to overbake, or the bars will turn crumbly.
Remove from the oven and let cool on a wire rack for at least 1 hour before slicing.
Slice the cooled bars into squares and enjoy!
- Tip 1: Bars will keep airtight at room temperature for up to 1 week.
