Ingredients
  

  • 1 jar almond butter I used raw, no-salt added
  • ¾ cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ teaspoon salt or to taste
  • ½ teaspoon baking soda
  • ½ cup mini semi-sweet chocolate chips plus about 2 tablespoons for sprinkling

Instructions
 

  • Preheat your oven to 350°F. Line an 8-by-8-inch baking pan with aluminum foil and spray it with cooking spray; set aside.
  • In a large bowl, whisk together the almond butter and brown sugar until smooth and combined.
  • Add the egg, vanilla, salt, and baking soda into the mixture and stir until combined. The dough will be thick and slightly granular.
  • Fold in the mini chocolate chips until evenly distributed throughout the dough.
  • Transfer the batter to the prepared pan, packing it with a spatula to form an even, smooth layer.
  • Sprinkle the remaining chocolate chips on top of the batter.
  • Bake for about 13 to 14 minutes, or until the center is set and done. Be careful not to overbake, or the bars will turn crumbly.
  • Remove from the oven and let cool on a wire rack for at least 1 hour before slicing.
  • Slice the cooled bars into squares and enjoy!
