Equipment

  • Wooden Spoon
  • Slow Cooker
  • Baking Sheet

Ingredients

  • 15 ounces No Bean Chili
  • 30 ounces Roasted Tomatoes canned, usually you'll need two cans for 30 ounces
  • 10 ounces Tomatoes with Green Chilis Rotel, canned, I used mild
  • 15.25 ounces Whole Kernel Corn drained, canned
  • 15 ounces Ranch Style Beans canned, can also use canned pinto beans
  • 15 ounces Black Beans drained, canned
  • 8 ounces Velveeta Cheese cubed

Instructions

  • Start by grabbing your slow cooker and add the No Bean Chili, roasted tomatoes, tomatoes with green chilis, whole kernel corn (drained), ranch style beans, and black beans (drained). This mixture forms the base of your soup, bringing together a medley of flavors that are simply irresistible. Make sure to mix everything together well to ensure all the ingredients are evenly distributed.
  • Next, it's time to add the star of the show: cubed Velveeta cheese. Place it on top of the mixed ingredients in the slow cooker. Don't worry about stirring it in just yet; it will melt beautifully as the soup cooks.
  • Now, cover your slow cooker and set it to high heat for about three hours, or low heat for five hours. During this time, the magic happens! The ingredients meld together, and the cheese transforms into a creamy delight that enriches every bite.
  • As the cooking time nears its end, the aroma will fill your home, beckoning everyone to gather around. Once done, it’s time to stir the soup well. Make sure to combine the melted Velveeta cheese into the other ingredients; this creates that velvety texture that is so comforting.
  • Once everything is well mixed, serve the soup hot in bowls. You’ll want to enjoy it while it’s warm, as each spoonful is a cozy reminder of home. Pair it with your favorite crackers or bread for a complete meal!
