Ingredients
  

  • 1 tablespoon Extra virgin olive oil
  • 1 8-inch whole wheat or flour tortilla
  • 1/3 cup chopped mixed fresh herbs
  • 1/2 cup canned San Marzano tomatoes, crushed
  • 1 cup shredded provolone cheese
  • 1/2 cup marinated artichoke hearts
  • to taste Kosher salt and black pepper
  • 4 pepperoni slices
  • 1 ball burrata cheese
  • 1/2 cup baby arugula
  • to taste crushed red pepper flakes
  • 2 tablespoons honey
  • 1 teaspoon chili paste

Instructions
 

  • Preheat the broiler to high with a rack in the top third of the oven.
  • In a large oven-safe skillet, heat a drizzle of extra virgin olive oil over high heat. When it shimmers, add the tortilla to the skillet.
  • Sprinkle the tortilla with the mixed fresh herbs, spread on the crushed San Marzano tomatoes, and add the shredded provolone cheese, marinated artichoke hearts, and pepperoni.
  • Remove the skillet from the heat and add the burrata cheese (or mozzarella).
  • Transfer the skillet to the oven and broil for 1 to 2 minutes, or until the cheese is melted and bubbling.
  • Remove from the broiler and carefully slide the pizza out of the skillet onto a plate.
  • Top the pizza with baby arugula, crushed red pepper flakes, and a drizzle of hot honey.
  • For the hot honey, stir together the honey and chili paste in a small bowl.
